Pancake Day in the UK

I have a foodie friend, Polly. We've been quilting buddies for, wow!! almost 16 years. Gosh, when did that happen? She facebooked that today is Pancake Day( Mardi Gras) for our UK cousins, so in her honor, I'll post a pancake recipe that is from the other side of the pond. Not the UK, but Belgium....cuz the hubster was born in Brussels.
From the cookbook: Everybody Eats Well in Belgium Cookbook by Ruth Van Waerebeek (1996)
FYI, haven't had a failed recipe yet.

Brueghel Pannekoeken (Flemish Yeast Pancakes)

1/2 oz fresh yeast cake or 1 package active dry yeast
3 cups milk, warmed to 100ยบ
4 cups all purpose flour
1/2 cup sugar
1/2 teaspoon salt
4 large eggs, slightly beaten
2 teaspoons vanilla extract
6 tablespoons unsalted butter, melted
About 1 cup of water
6 tablespoons unsalted butter, room temp or softer for frying

In a small bowl, dissolve yeast in  1/4 cup of the lukewarm milk. Let rest until foamy. About 5 minutes

In a large mixing bowl, whisk the flour, sugar and salt until well mixed. Make a well in the center. Pour the eggs, dissolved yeast and vanilla into the well. Using a whisk or wooden spoon, gradually  stir the flour into the liquid ingredients.

By working this way, you'll avoid having lumps form in the batter. Add the remaining 2 3/4 cups of milk and the melted butter and stir. Add water, a little at a time, to make a smooth but liquid batter that is the consistency of thick, heavy cream.

Cover the bowl with plastic wrap or a kitchen towel and let it rise in a warm place until doubled in volume. About an hour.

Place an 8 or 9 inch skillet over medium heat and brush with the soft butter.
Pour a scant 1/2 cup of the batter into the pan and tilt the pan so a thin layer of batter covers the entire surface of the pan. Cook until lightly browned. Turn and cook until lightly brown on this side. Thinner than a ihop pancake but thicker than a crepe.

Stack pancakes on a warm plate until you have finished the batch. Serve as soon as possible.
Serve with butter, dark brown sugar and a assortments of jams and preserves.

Bon Appetite!!

Shamrocks and spring

Spring has sprung in the delta region of California. It gets warmish, it gets coldish and back again. The blooms are really starting to make everything smell wonderful and the hint of green peeking through makes everything look fresh.
Just a few shots of the ol' front yard. I promised the hubs I would weed for 10-15 minutes everyday. For those of you that don't know me....I burn walking to and from the car, so I am a sight to behold in a tragic looking sun hat, gloves, apron with a bright orange bucket in my hand. :-)

The plum tree

The plum tree, close up and personal

Getting older is a crime?

My brain cells are dying. It's true. Between raising kids and menopause I can hardly remember what I am doing while I'm doing it. Believe it or not, this stuff is ''for real".

And I know I need it because I was pulling out of the driveway, on the way to the post office, when all of the sudden it dawned on me: Ack!! The apron that was the main part of the package was stilllllll hanging on the dress form!!

At least I remembered before I actually mailed it!!  It would've been a felony to retrieve it and then petty theft and mail fraud to shove it back in the drop box. LOL  Oh nooooooooo, who knew getting older was criminal??? Not me or else I wouldn't have done it!!

Tea review

I wash shopping the other day and was low on tea. I loves me some good ol' Lipton. And sometimes I like English Breakfast or Irish Breakfast and on occasion, some Lady Earl Gray. As you can see, I am not into fancy brews. Wellllll, I was watching Being Human on BBC America and Pyramid tea was mentioned. As happenstance would have it, I saw a box of P and G in the market......"England's No. 1 Tea" according to the box anyway. So I made a hot cuppa this morning and here's what I thought:

As you can see, the tea bags look very different. Hence the slang Pyramid. The bag is more loosely woven and the tea seems to be ground instead of leafy. I suggest you give them a little pat to shake out the loose powder or you will have some sediment in the bottom of your cup. The Lipton was more leafy looking, although the pieces were quite small.
They smelled similar, the Lipton a little more fragrant. The P&G has no string.

When I dropped it in the hot water, it sank like a stone. Right then I was missing the string. After a minute or so, it floated right to the top. Still missing the string, but now, at least, I didn't have to dig it out. LOL

It brewed fast. It was a tad more orangey than the Lipton. The liquid was not as clear and when I added the sugar, it got a lot more frothy than Lipton. It was a littler more bitter and needed a little more sugar, but it wasn't too bad. Conclusion: I still prefer the Lipton but this isn't a bad second choice. Later today, I will see if it can pass the iced tea test. Watch for an update!!

Happy sipping!!
